Chamomile

Whole chamomile flowerheads, dried at low temperature to preserve the essential oils. The flowers should be intact when you receive them, not crushed to dust the way most supermarket chamomile is sold. Steep for five to seven minutes. The classic evening tea, but also lovely on a slow afternoon.
