Mullein has a long history as a respiratory tonic. The leaves are large, soft, and silver-grey, and they yield a calm pale tea with a hay-like sweetness. We dry our leaves carefully and strain twice through fine muslin to keep the tiny hairs out of the cup. Brew with hot water for eight to ten minutes, longer if you prefer a stronger steep. Take it on its own or with a teaspoon of raw honey.
