Pine needle tea is one of the slower drinkers on our shelf, but for those who take to it, nothing else really lands the same. We blend young needles harvested in late winter when the volatile oils are at their peak. The brew is pale gold in the cup, with a bright lemony lift on the front and a warming, almost balsamic finish. It pairs well with honey and a thin slice of orange. Steep for four to six minutes in water just off the boil. A second steep is encouraged, sometimes better than the first.
